Cremants

Crémant is a sparkling wine produced in France out of the bounds of the Champagne province. The name of the Champagne wine region is included into the name of this product. The Technology Cane sugar and grape yeast are added to ready-made wine, then the blend is closed into special bottles and undergoes second fermentation in an inverted position. The crust that grows on the corks is to be removed manually; for this purpose the bottles are quickly uncorked and then sealed again. This method is traditionally considered to have been invented in the latest third of XVIIth century by the monk Dom Pierre Pérignon. The famous champagne brand Dom Pérignon, owned by the company ‘Moët & Chandon’ at the present time, is named after him. Some historians assume, that sparkling wines had been produced before, even in the ancient times. But the technology of their preparation was too primitive, that is why most of the bottles exploded before the consumers could get them. Apart from the classical technology, bulk process champagne is also produced in France. This technology was invented by French wine-makers, who were not able to satisfy the quickly growing demand for champagne. In this case second fermentation and carbonation of wine occur in big tanks (acratophores) and not in bottles, which helps to increase the production volume considerably, but at the same time results in deterioration of quality. The wine, produced by this method becomes a 'mass-consumption product' and cannot be granted the highest quality category (AOVDQS and A??) or recommended to a discerning consumer. Crémants are traditionally made of the same grape variety.
